I'm sure you've heard of...
I'm sure you've heard of it, and maybe you've tried it.. but if you havent.. now is the time.
Beer can chicken. This was so freaking delicious, it might possibly have been the best thing I've ever made. And to be not so humble for a minute, that's saying something.
The recipes you find on the web say to dry rub the chicken. I did it differently.
I got a 3 to 4 pound whole chicken (actually, got 2 of them for $7.50 from BJs club)
I used a store bought marinade mix, chipolte pepper - but instead of following the directions, I just used the powder in the packet, and added apple cider vinegar instead of water and about 3 big spoons full of fresh garlic (the kind you buy in a jar).
Put it in a big ziploc bag and marinaded for 2 days.
Then, you heat up your grill as hot as you can, then shut off one side (or, move the coals over if you are using charcoal)
open a beer, drink half, and then stick the can in the chicken's cavity. Now stand up the chicken, using it's legs and the can as kindof a tripod, and close the lid. I checked on it a few times, but probably didnt even have to. In about 1 hour, I had an internal temperature of 180. Brought it in, let it rest for about 10 minutes, then chopped it in half and served one side for me, one side for my wife.
So freaking good You must try this at least once this summer.
I'm not sure if it will make a difference, but next time I will put a little ball of tin foil in the neck cavity, so the steam from the beer will have more of an effect.
